1 cucumber, sliced
1 lemon, juiced
2.1 oz (60 g) walnuts, toasted
10 radishes, sliced

Instructions

  • Cook rice according to package instructions. Drain and cool completely.
  • In bowl, whisk 5 tablespoons olive oil, lemon juice, and 2 tablespoons white vinegar. Season with salt and pepper.
  • In large bowl, mix rice with dill, cucumber, and radishes. Add dressing and toss.
  • Top with toasted walnuts and serve.
