Ingredients

2 green onions, finely sliced
0.35 oz (10 g) fresh ginger, grated
0.35 oz (10 g) sesame seeds
½ cucumber
1 carrot, peeled
4.2 oz (120 g) soba noodles
1 tbsp toasted sesame oil
1 tbsp rice vinegar
1 tsp maple syrup
2 tbsp tamari

Instructions

  • Cook soba noodles according to package instructions. Set aside. Cut cucumber and carrot into thin strips.
  • In bowl, whisk together 2 tablespoons olive oil, toasted sesame oil, rice vinegar, tamari, maple syrup, and grated ginger.
  • Combine noodles, vegetables, and dressing in large bowl. Toss well.
  • Sprinkle with sesame seeds and serve chilled.
