Braised Tofu in Tomato-Ginger Sauce

Ingredients
4 cloves garlic, finely chopped
3-inch piece fresh ginger, peeled, finely chopped
2 lbs (900 g) cherry tomatoes, halved
28 oz (800 g) firm tofu, ½-inch thick slices
2 tbsp tamari
4 tsp rice vinegar
2 tsp sugar
2 green onions, thinly sliced

Instructions
- Heat 2 tablespoons olive oil in deep skillet over medium-high. Sauté garlic and ginger for 30 to 60 seconds until fragrant.
- Add tomatoes and 4 fl oz (120 ml) water. Season with salt and pepper. Cover, reduce heat to medium-low, and cook for 10 to 12 minutes, until tomatoes soften.
- Meanwhile, heat 2 tablespoons olive oil in another skillet over medium-high. Sear tofu slices in batches. Cook until golden (about 3 to 4 minutes per side). Season with salt and pepper.
- Stir tamari, rice vinegar, and sugar into tomato sauce. Taste and adjust seasoning as needed.
- Add tofu to tomato sauce, turning gently to coat. Simmer for 2 minutes until heated through. Serve topped with green onions.
