Sweet & Sour Cauliflower Bites

Ingredients
6 tbsp cornstarch + 1 tsp for sauce
2 lbs (900 g) cauliflower, cut into bite-size florets
3 tbsp ketchup
3 tbsp sugar
2 tbsp rice vinegar
2 tbsp tamari
1 clove garlic, finely chopped
2 green onions, thinly sliced

Instructions
- Preheat oven to 425°F (220°C).
- In large bowl, toss cauliflower with 3 tablespoons cornstarch, salt, and pepper. Drizzle with 2 tablespoons olive oil and toss again. Repeat with remaining 3 tablespoons cornstarch and 1 tablespoon olive oil until well coated.
- Place on lined baking sheet and roast for 10 minutes. Flip cauliflower, then roast another 8 to 10 minutes until golden and tender.
- Meanwhile, in small pot, combine ketchup, sugar, vinegar, tamari, and garlic. Heat over medium heat until bubbling.
- In separate bowl, whisk 1 teaspoon cornstarch with 2 tablespoons water. Stir into sauce and cook for 1 minute until thickened.
- Toss cooked cauliflower with sauce. Top with green onions and serve.
