Ingredients

1 red onion, sliced
1 tsp whole grain mustard
½ lemon, zested, juiced
8.4 oz (240 g) jar brown lentils, drained
1 cucumber, diced
7 oz (200 g) cherry tomatoes, quartered
1 bell pepper, chopped
0.3 oz (10 g) fresh parsley, finely chopped
0.2 oz (6 g) fresh mint, finely chopped
1 avocado, cubed

Instructions

  • Place onion in ice bath to mellow flavor. In small bowl, whisk 4 tablespoons olive oil, mustard, 1 teaspoon lemon juice, and ½ teaspoon zest. Season with salt and pepper.
  • In large bowl, toss vegetables and herbs with dressing. Add lentils and onion, then mix well. Fold in avocado cubes.
  • Let salad briefly marinate before serving.
