Banana Chia Chocolate Pancakes

Ingredients
12.3 oz (350 g) self-raising flour
1 tsp chia seeds
2 tbsp melted coconut oil + 1 tsp for cooking
13.5 fl oz (400 ml) unsweetened almond milk
2 tbsp maple syrup
3.5 oz (100 g) 70% dark chocolate, roughly chopped
2 bananas, sliced

Instructions
- Sift flour into large bowl. Stir in chia seeds and pinch of salt.
- Mix in melted coconut oil, almond milk, and maple syrup. Fold in chocolate and let batter rest for 5 minutes.
- Heat ½ teaspoon coconut oil in frying pan over medium.
- Spoon in batter and top with banana slices. Once bubbles form, flip. Cook until golden and caramelized (about 3 to 5 minutes per side). Repeat with remaining batter.
