3.5 oz (100 g) rolled oats
17 fl oz (500 ml) unsweetened almond milk
2 ½ tbsp fresh lemon juice
2 tbsp maple syrup
0.35 oz (10 g) ground flaxseeds
2 tsp poppy seeds, plus extra for topping
1 tsp lemon zest, plus extra for topping

Instructions

  • In medium saucepan, combine oats and almond milk. Bring to a boil.
  • Reduce heat and simmer for 5 to 7 minutes, stirring occasionally.
  • Stir in lemon juice, maple syrup, flaxseeds, poppy seeds, lemon zest, and pinch of salt. Cook until creamy.
  • Divide between two bowls and serve, or store in fridge for up to 4 days.
