Ingredients
2 eggs
2 oz (60 g) sour cream
2.75 fl oz (80 ml) banana juice or nectar
4 ripe bananas
9 oz (250 g) all-purpose flour
1 tsp baking soda
½ tsp ground cinnamon
5.25 oz (150 g) brown sugar
1 tsp vanilla extract
4 oz (115 g) butter, softened
walnuts, chopped (optional)

Instructions
- Preheat oven to 340°F (170°C). Grease loaf pan.
- In bowl, mash bananas with banana juice or nectar until smooth. In separate bowl, mix flour, baking soda, cinnamon, and ¼ teaspoon salt.
- Beat butter and brown sugar, then add eggs one at a time, still beating. Add banana mash, sour cream, and vanilla extract mix.
- Fold in dry ingredients, plus walnuts if using, and mix until combined. Pour into pan and bake for 45 to 50 minutes. Remove from oven and let cool.
