One-Pot Lemon Chicken Gnocchi

Ingredients
14 oz (400 g) gnocchi
10.5 oz (300 g) boneless, skinless chicken breast
4 tbsp crème fraîche
2 oz (30 g) Parmesan cheese, grated
2 oz (60 g) baby spinach
1 lemon, ½ sliced, ½ juiced
1 tsp curry powder
2 cloves garlic, minced
10 fl oz (300 ml) chicken stock

Instructions
- Heat 2 tablespoons olive oil in skillet. Sear chicken on both sides for 6 to 8 minutes. Remove.
- Sauté gnocchi and garlic for 2 minutes.
- Add stock, lemon juice, crème fraîche, and curry powder. Season with salt and pepper.
- Return chicken to skillet and add lemon slices. Simmer for 5 minutes.
- Stir in spinach and Parmesan. Simmer for 1 more minute.
- Remove lemon slices. Serve hot.
