2.8 oz (80 g) zucchini, sliced
2 oz (60 g) feta cheese, crumbled
2 oz (60 g) ricotta cheese
3.5 oz (100 g) baby spinach
1.75 oz (50 g) frozen green peas
2 green onions, finely sliced

Instructions
- Preheat oven to 430°F (220°C).
- Wash and drain spinach, setting a few leaves aside for garnish. Blend 8 eggs, spinach, ricotta, and 1 tablespoon olive oil until smooth. Season with salt and pepper.
- Grease small casserole dish with 1 tablespoon oil. Pour in egg mixture.
- Top with zucchini, green onions, and peas. Bake for 15 to 20 minutes.
- Add feta cheese and spinach leaves to garnish. Bake for 5 more minutes, then serve.
