Baked Tomato, Bean, & Egg Skillet

2 x 14 oz (400 g) cans plum tomatoes
14 oz (400 g) can mixed bean salad, drained
7 oz (200 g) baby spinach
4 eggs
1.75 oz (50 g) smoked ham, thinly sliced, torn

Instructions

  • Add tomatoes and beans to ovenproof skillet or shallow ovenproof dish. Simmer for 10 minutes, until slightly reduced.
  • Stir in spinach and cook until wilted (about 5 minutes).
  • Preheat broiler to medium or low. Create 4 wells in mixture and crack egg into each.
  • Nestle ham among eggs. Broil for 4 to 5 minutes, until egg whites are set and yolks are still runny.
