Coconut Ginger Rice

Ingredients
14 oz (400 g) basmati rice
12 fl oz (360 ml) canned light coconut milk
8 fl oz (240 ml) vegetable stock
3 green onions, thinly sliced
2 tbsp ginger, finely chopped
fresh red chili, sliced, for garnish (optional)

Instructions
- Rinse rice under cold water. Add to saucepan with 8.1 fl oz (240 ml) water, coconut milk, vegetable stock, and 1 teaspoon salt.
- Bring to a boil, reduce heat, cover, and simmer until liquid is absorbed and rice is tender (about 15 minutes).
- Stir in green onions and ginger. Add more coconut milk if too dry. Season to taste with salt. Garnish with chili slices, if desired.
