Air Fryer Tofu with Coconut Ginger Rice

Ingredients
14 oz (400 g) firm tofu, drained
4 oz (11 5g) potato starch
4 tbsp coconut sugar
3 tbsp rice vinegar
3 tbsp tamari
½ tsp sambal oelek
1 green onion, sliced, for serving

Instructions
- Preheat air fryer to 375°F (190°C), if needed.
- Wrap tofu in kitchen towel and press under heavy object for 10 to 30 minutes to remove moisture.
- In bowl, combine potato starch, 1 teaspoon salt, and pepper. Cut tofu into ¾-inch cubes and toss in starch mixture to coat.
- Spray air fryer basket. Shake off excess starch and place tofu in single layer. Spray again (1 teaspoon oil total).
- Cook for 10 minutes. Toss tofu, then cook for another 10 minutes until crisp and lightly browned.
- While tofu cooks, make glaze. In small pan, combine sugar, vinegar, and tamari. Simmer over medium heat for 5 minutes until slightly thickened. Stir in sambal.
- Toss hot tofu in glaze. Top with green onions and serve with Coconut Ginger Rice (see original recipe).
