Chili Crisp Fried Tofu Rice

Ingredients
1 yellow onion, diced into ½-inch pieces
14 oz (400 g) extra-firm tofu, crumbled into 1-inch chunks
28 oz (960 g) cooked white rice
3 tbsp chili crisp oil
2 tbsp tamari
8 oz (225 g) frozen edamame
2 green onions, thinly sliced

Instructions
- Heat 2 tablespoons olive oil in large wok or skillet over high heat. Add onion and stir fry for 1 to 2 minutes.
- Add tofu, ½ teaspoon salt, and pepper. Stir fry until golden at edges (about 2 to 3 minutes).
- Add rice, chili crisp, and tamari. Stir 3 to 4 minutes until heated through and lightly browned.
- Add edamame and cook until warmed through (about 2 to 3 minutes).
- Turn off heat. Toss in green onions. Serve with extra chili crisp oil, if desired.
