7 oz (200 g) roasted peppers (jarred)
1.75 oz (50 g) almonds
1 clove garlic

Instructions

  • Cook pasta according to package instructions.
  • Toast almonds in dry pan until golden, then set aside. Reserve some for garnish (optional).
  • In blender, combine roasted peppers, toasted almonds, 1 tablespoon olive oil, and garlic. Season with salt and pepper and blend until smooth.
  • Drain pasta and toss with pepper-almond sauce.
  • Garnish with extra toasted almonds, if desired.
