Ingredients

For the dry ingredients:
  1 ½ cups (190 g) white whole wheat flour
  ½ cup (100 g) coconut sugar
  ½ tsp baking powder
  ½ tsp baking soda
  1 ½ tsp chai spice (store-bought, or see homemade mix)
  ⅛ tsp salt
For the wet ingredients:
  2 small apples, grated, moisture removed
  1 cup (250 g) unsweetened applesauce
  2 large eggs
  4 tbsp Greek yogurt
  1 tsp vanilla extract
  ½ cup (120 ml) unsweetened almond milk
  ½ cup (120 ml) maple syrup
  2 tbsp melted coconut oil
For the frosting:
  ½ cup (115 g) fat-free cream cheese, room temperature
  ½ cup (120 g) fat-free Greek yogurt, room temperature
  2 tbsp maple syrup
For garnish:
  ¼ cup (30 g) walnuts, chopped
  ground cinnamon
For the homemade chai spice mix:
  6 tsp ground ginger
  2 tsp ground nutmeg
  2 tsp ground allspice
  2 tsp ground cardamom
  4 tsp ground cinnamon
  2 tsp ground cloves

Instructions

  • Preheat oven to 350°F (180°C). Line 8 x 12 in cake pan with parchment paper.
  • Place all dry ingredients into large bowl and mix well. Set aside.
  • In separate bowl, add wet ingredients, except for coconut oil. Mix until well combined. Then, fold dry ingredients into wet mixture.
  • Add the melted coconut oil into cake batter and stir to combine. Pour batter into prepared pan and bake in oven for 35 minutes.
  • Meanwhile, place frosting ingredients into bowl and whip together using hand mixer.
  • Once cake has cooked and inserted toothpick comes out clean, remove from oven and place on wire rack to cool completely. Once cool, layer frosting on top. Garnish with ground cinnamon and walnuts.
