Apple Nachos

2 large apples
1 tsp lemon or lime juice
½ cup (85 g) sugar-free chocolate chips
3 tbsp peanut butter (or sunbutter for nut-free alternative)
1 ½ tsp coconut oil

Instructions
- Slice apples into thin slices and discard core. Toss apples in bowl with lime or lemon juice to prevent browning. Spread slices out onto large plate.
- Place chocolate chips and coconut oil into small saucepan over low heat. Stir mixture until most chocolate chips have melted. Remove pan from heat and keep mixing until all chocolate chips have melted. Set aside.
- Heat peanut butter in another small saucepan until runny. Add ½ teaspoon of coconut oil if mixture is too thick.
- Once slightly cooled, pour peanut butter into plastic bag. Cut small corner off plastic bag and drizzle over apples. Repeat with melted chocolate.
- Sprinkle hemp seeds and more chocolate chips if desired.
