Creamy Pesto Beans

Ingredients

18 oz (513 g) mix of canned white & red beans, divided
8 fl oz (240 ml) light coconut milk
1.1 oz (32 g) vegan pesto, divided
1 clove garlic
0.3 oz (8 g) parsley, chopped

Instructions

  • In blender, combine ⅓ of beans, coconut milk, half of pesto, and garlic. Blend until smooth. Add splash of water if needed to thin.
  • Pour into pot with remaining beans. Simmer for 5 to 7 minutes until warmed through. Season to taste with salt and pepper.
  • Divide into bowls and top with remaining pesto and parsley.
