12 fl oz (360 ml) unsweetened almond milk
½ tsp vanilla extract
8.5 oz (240 g) all-purpose flour
1 tbsp baking powder
1 tbsp coconut sugar
2 fl oz (60 ml) melted coconut oil
berry compote, for serving (optional)

Instructions

  • Mix milk with 2 teaspoons apple cider vinegar and vanilla extract in small bowl. Let sit for 5 minutes.
  • In large bowl, sift flour, baking powder, and ½ teaspoon salt.
  • Add sugar, melted oil, and milk mixture. Mix gently until just combined.
  • Preheat waffle maker to medium heat.
  • Scoop 4 fl oz (120 ml) batter into center. Close and cook according to waffle maker instructions.
