Seared Tofu with Kimchi

Ingredients
14 oz (400 g) firm tofu, drained, cut into 8 slices
2 tbsp sesame oil
2 green onions, trimmed, cut into 2-inch pieces
5.3 oz (150 g) kimchi, coarsely chopped
2 tbsp kimchi juice
2 tbsp tamari
1 tsp coconut sugar

Instructions
- Pat tofu dry using paper towels.
- Heat sesame oil in large skillet over medium heat. Add tofu in single layer and cook, undisturbed, for 4 minutes. Flip and cook for 3 to 4 more minutes until lightly golden.
- Add green onions and kimchi to pan. Gently stir to combine with tofu. Cook for 1 to 2 minutes until kimchi softens slightly.
- Add kimchi juice, tamari, sugar, and 4 fl oz (120 ml) water. Bring to a boil, reduce heat to medium, and simmer for 5 to 6 minutes until saucy.
