Hazelnut Oat Cookies

Ingredients
1.75 oz (50 g) butter, plus more for greasing
2 tbsp maple syrup
1 apple, unpeeled, coarsely grated
1 tsp cinnamon
1.75 oz (50 g) raisins
1.75 oz (50 g) porridge oats
1.75 oz. (50 g) spelt flour
1.5 oz (40 g) hazelnuts, roughly chopped
1 egg

Instructions
- Preheat oven to 350°F (180°C). Line baking tray with parchment paper.
- In small saucepan, melt butter with maple syrup. Add grated apple and cook over medium heat, stirring until softened (about 6 to 7 minutes). Stir in cinnamon and raisins.
- In mixing bowl, combine oats, flour, and hazelnuts. Add apple mixture, then beat in egg until well combined.
- Spoon 9 mounds onto tray and space apart. Gently flatten into discs to form cookies.
- Bake for 18 to 20 minutes, until golden. Cool on wire rack.
- Store in airtight container for up to 3 days.
