Tuna Salad with Sweet & Spicy Peppers

1 red bell pepper, thinly sliced
1 red chili, seeded if desired, thinly sliced
2 celery stalks, diced
7 oz (200 g) tuna in olive oil (drained weight)
0.5 oz (15 g) parsley, coarsely chopped

Instructions

  • In large bowl, combine red bell pepper and chili with 1 ½ tbsp vinegar and big pinch of salt. Let sit for 10 minutes.
  • Add celery, tuna, and parsley to bowl. Gently toss until tuna flakes into bite-sized pieces and everything is well mixed.
  • Season with salt and pepper. Serve immediately or refrigerate in airtight container for up to 2 days.
