Baked White Beans & Sausage

1 lb (450 g) pork sausages
4 cloves garlic, unpeeled
17 oz (480 g) canned cannellini beans, drained
6 fl oz (180 ml) unsweetened apple juice

Instructions

  • Preheat oven to 375°F (190°C). Prick sausages with fork and place in baking dish with garlic cloves. Drizzle with 2 tablespoons olive oil and toss to coat. Bake for 20 to 25 minutes, until sausages start to brown on top.
  • Remove from oven and carefully flip sausages. Add beans and apple juice to baking dish. Stir gently.
  • Return to oven and bake for another 20 minutes, until beans are warmed through.
  • Remove from oven, stir everything together, and season with salt and pepper to taste.
