Peanut Butter Oat Ice Cream

6 oz (180 ml) maple syrup
16 oz (480 ml) unsweetened oat cream
8 oz (240 g) smooth peanut butter
1 tsp vanilla extract

Instructions
- Simmer maple syrup in small saucepan over medium-low heat. Stir occasionally for 8 to 12 minutes, or until reduced by about one-third. Remove from heat and stir occasionally as it cools. About ½ cup of syrup should remain.
- Add cooled syrup, oat cream, peanut butter, vanilla extract, and pinch of salt to blender or food processor. Blend until completely smooth.
- Pour mixture into loaf pan, cover, and freeze overnight or for at least 5 hours until firm.
- Remove pan from freezer to thaw for 10 minutes before serving. Top with chocolate shavings.
