Green Bean & Tofu with Spicy Peanut Sauce

Ingredients
7 oz (200 g) crunchy peanut butter
1 ½ tbsp hoisin sauce
1 tbsp fresh lime juice
1 ½ tsp coconut sugar
¼ tsp chili flakes, plus more for garnish
12 oz (340 g) green beans, trimmed, cut
14 oz (400 g) extra-firm tofu, cubed
1 tsp red pepper flakes

Instructions
- Bring pot of salted water to a boil.
- In bowl, combine peanut butter, hoisin, lime juice, sugar, and red pepper flakes. Add 2 tablespoons boiling water to dressing and stir until smooth. Add more water if needed.
- In pot, cook green beans for 2 to 3 minutes until just tender, then drain and rinse under cold water.
- Toss beans and tofu in dressing. Season with salt and garnish with red pepper flakes.
- Serve immediately or refrigerate for up to 2 days.
