Ingredients
For the dough:
10.9 to 12.1 oz (310 to 345 g) all-purpose flour

½ tsp red pepper flakes
1 bunch green onions, sliced
2 tbsp all-purpose flour

Instructions
- Mix flour and 1 teaspoon salt in bowl. Add 8.3 fl oz (235 ml) boiling water and stir. Knead in 3 tablespoons olive oil until smooth. Cover and let rest for 30 minutes.
- Mix flour and red pepper flakes in small bowl and season with salt and pepper. Heat 3 tablespoons of oil, then pour over the dry mix. Stir.
- Divide dough into 6 pieces. Roll 1 piece out into thin rectangle. Spread filling and sprinkle green onions.
- Roll into log, then into spiral. Flatten and roll into pancake (6 to 7 inches). Repeat with the rest.
- Heat dry non-stick pan over medium heat. Cook each pancake for 3 to 5 minutes per side until golden. Serve warm.
