Spinach & Feta Stuffed Chicken Breasts

Ingredients
1 clove garlic, chopped
2.8 oz (80 g) spinach
1.4 oz (40 g) feta cheese, diced
0.7 oz (20 g) sun-dried tomatoes, chopped
2 x 5.3 oz (150 g) chicken breasts
1 tsp paprika
1 tsp chili flakes

Instructions
- Heat 1 tablespoon olive oil in pan. Sauté garlic for 2 minutes. Add spinach and cook until wilted. Season with salt and pepper. Mix in feta cheese and sun-dried tomatoes. Set aside.
- Butterfly chicken breasts and gently pound to flatten. Season with paprika, chili flakes, salt, and pepper. Add filling, fold, and secure with toothpicks.
- Heat another tablespoon olive oil and cook chicken for 20 minutes, turning to brown all sides. Serve with salad or side of choice.
