Ingredients

16 oz (454 g) pasta of choice
16 fl oz (475 ml) reserved pasta water
5 oz (140 g) yellow onion, chopped
4 cloves garlic, peeled
1 tsp paprika
1 tbsp Italian seasoning
16 oz (454 g) frozen peas, thawed
12 oz (340 g) silken tofu
1 oz (30 g) fresh basil

Instructions

  • Cook pasta according to package instructions. Reserve 2 cups (16 fl oz / 475 ml) of pasta water, then set pasta aside.
  • In same pot, heat 1 tablespoon olive oil over medium-high heat. Add onion and garlic and sauté until softened.
  • Stir in paprika and Italian seasoning. Add peas and cook for 5 minutes, stirring often.
  • Transfer mixture to blender. Add tofu and basil, then blend until smooth and creamy.
  • Return sauce to pot over medium-low heat. Simmer for 5 minutes, stirring. Add pasta and toss to coat. Adjust consistency with reserved pasta water if needed. Season with salt and pepper.
  • Garnish with red pepper flakes, if desired.
