Chia Seed Blueberry Pancakes

6.8 fl oz (200 ml) unsweetened almond milk
6.2 oz (175 g) self-raising flour
1 tbsp coconut oil, melted
1 tsp chia seeds
3 tbsp maple syrup, divided
5.6 oz (150 g) blueberries

Instructions
- In large bowl, mix flour and chia seeds. Add almond milk, melted coconut oil, and 1 tablespoon maple syrup. Stir to form smooth batter. Let rest for 5 minutes to thicken.
- Heat a little coconut oil in pan over medium heat. Drop in 2 tablespoons batter per pancake. Top with a few blueberries.
- Cook until bubbles form and underside is golden, about 3 to 5 minutes. Flip and cook for 3 to 4 minutes. Serve with remaining maple syrup and blueberries.
