5.3 oz (150 g) cashews
4.2 oz (120 g) unsweetened shredded coconut
3 tbsp maple syrup
2 fl oz (60 ml) lemon juice
2 tbsp lemon zest
2 tbsp chia seeds
1.2 oz (33 g) unsweetened desiccated coconut, to coat

Instructions
- In food processor, blend cashews and shredded coconut into a coarse meal.
- Add maple syrup, lemon juice, and zest. Blend until sticky dough forms.
- Add chia seeds and pulse to mix. Adjust texture with more coconut or water if needed.
- Roll dough into 12 balls, using 1 tablespoon for each, and coat in shredded coconut. Chill on parchment paper. Store in the fridge for up to 1 week.
