Baked Greek Meatballs with Tzatziki

Ingredients
For the meatballs: 1 lb (450 g) ground turkey breast
1 egg
2 oz (56 g) breadcrumbs
½ red onion, minced
2 cloves garlic, minced
2 tbsp fresh mint, finely chopped
½ tsp dried oregano

For the bowls:
10.5 oz (300 g) dry orzo
5 oz (140 g) cherry tomatoes, halved
¼ cucumber, diced
¼ red onion, sliced
fresh mint, to serve
4 servings of Homemade Tzatziki Sauce (see original recipe)

Instructions
- Preheat oven to 350°F (175°C). Line baking sheet with parchment paper. Mix all meatball ingredients plus 1 teaspoon salt and pepper. Form into 16 meatballs, about 2 tablespoons per meatball. Bake for 14 to 16 minutes until fully cooked.
- Cook orzo according to package instructions. Drain and toss with 2 tablespoons olive oil.
- In bowl, combine cherry tomatoes, cucumber, and red onion. Season with salt and pepper.
- Assemble bowls with orzo, salad, meatballs, and tzatziki. Garnish with mint.
