Bell Pepper Beef Nachos

4 red bell peppers, cut into chunks
1 lb (450 g) 5% lean ground beef
1 yellow onion, diced
3 tbsp taco seasoning
8.1 oz (230 g) cheddar cheese, grated

Instructions

  • Preheat oven to 425°F (220°C). Line baking tray with parchment paper.
  • Place bell pepper chunks on tray and season with salt and pepper. Bake for 10 minutes.
  • Meanwhile, heat dry pan over medium heat. Add ground beef, breaking it up as it cooks. Add onion and taco seasoning. Cook until browned, about for 10 minutes.
  • Spread cooked beef and onion over baked bell peppers. Top with cheese and return to oven for 10 more minutes.
