Zucchini Breakfast Pizza Crust

Ingredients

10 oz (280 g) shredded or spiralized zucchini
2 oz (56 g) shredded mozzarella cheese
1.7 oz (47 g) all-purpose flour
1 clove garlic, minced
1 tsp dried oregano
1 tsp dried basil
1 egg, beaten

Instructions

  • Preheat oven to 550°F (290°C) on broil. Toss zucchini with 1 teaspoon salt and let sit for 15 minutes. Squeeze out moisture using clean towel.
  • Add cheese, flour, garlic, herbs, egg, and ½ teaspoon salt to zucchini. Mix well.
  • Line baking sheet with parchment paper. Spread mixture into a 5-inch circle (about ¼-inch thick) and lightly score edges. Bake until mixture starts to brown, about 8 to 10 minutes.
  • Reduce oven to 400°F (200°C). Add any additional toppings, if desired. Bake for another 8 to 12 minutes.
  • Garnish with fresh herbs and serve.
