Potato Cheese Omelet

Ingredients

1 red onion, peeled, sliced
12 oz (340 g) potatoes, thinly sliced
6 eggs
0.15 oz (4 g) fresh parsley, chopped + a few leaves for garnish
2.8 oz (80 g) mozzarella, shredded
¼ tsp chili flakes
½ tsp garlic powder

Instructions

  • Heat 1 tablespoon olive oil in pan over medium heat. Add onion and cook until soft, about 3 to 4 minutes. Remove and set aside.
  • In same pan, cook potatoes until golden, about 3 minutes per side. Season with salt and pepper.
  • In bowl, whisk eggs and season with salt. Stir in cooked onion, parsley, garlic powder, chili flakes, salt, and pepper. Pour egg mixture over potatoes. Cover and cook over low heat for 3 minutes.
  • Carefully flip omelet. Sprinkle with mozzarella and cover. Cook until cheese melts, about 2 minutes, then fold in half. Garnish with parsley and serve.
