Ingredients

8 fl oz (240 ml) plain coconut milk (from carton)
2 tsp matcha powder
2 tbsp maple syrup
½ lemon, juiced
1.7 oz (48 g) chia seeds
3.4 oz (96 g) strawberries, chopped
8 oz (225 g) unsweetened coconut yogurt

Instructions

  • In bowl, whisk together coconut milk, matcha powder, 1 tablespoon maple syrup, and lemon juice until smooth.
  • Stir in chia seeds. Let sit for 5 to 10 minutes, then stir again. Refrigerate for at least 1 hour until set.
  • In small bowl, mash strawberries with 1 tablespoon maple syrup until slightly chunky.
  • Layer mashed strawberries, coconut yogurt, and chia pudding into jars.
  • Serve immediately or chill in refrigerator to have later.
