5.3 oz (150 g) rolled oats
2.5 oz (70 g) dates
1.8 oz (50 g) almonds
1 tbsp maple syrup
1 ripe banana, mashed
0.2 oz (5 g) shredded coconut
1 oz (30 g) almond meal

Instructions

  • In food processor, blend mashed banana, oats, dates, almonds, maple syrup, 1 tablespoon water, and pinch of salt until combined. Add shredded coconut and pulse briefly to incorporate.
  • Shape mixture into walnut-sized balls (1 tablespoon per ball).
  • Roll each ball in almond meal until evenly coated.
  • Refrigerate for at least 30 minutes before serving.
