Marinated Tofu Skewers

Ingredients
14 oz (400 g) firm tofu, drained
4 servings of Roasted Garlic Hummus (see original recipe)
For the marinade:
2 tbsp tamari
1 ½ tbsp lime juice
1 ½ tbsp Dijon mustard
1½ tbsp maple syrup
¼ tsp cayenne pepper
¾ tsp garlic powder
¾ tsp onion powder

Instructions
- If using wooden skewers, soak in warm water for 20 to 30 minutes to prevent burning.
- Slice tofu into 4 vertical slabs. Cover with kitchen towel and weigh down to press for 15 to 30 minutes. Cut into cubes.
- In jar, combine tamari, lime juice, mustard, maple syrup, 1 tablespoon olive oil, cayenne, garlic powder, and onion powder. Shake well to mix.
- Transfer tofu cubes to reusable bag, pour in marinade, and toss gently. Marinate for at least 15 minutes at room temperature or up to 8 hours in the fridge, flipping occasionally.
- Thread tofu cubes onto skewers, pressing closely together. Reserve any excess marinade.
- Preheat oven grill to high. Lightly oil wire rack and place skewers on top.
- Grill, rotating every 4 minutes, for 16 minutes total. Brush with reserved marinade as they cook.
- Remove from oven and serve with Roasted Garlic Hummus.
