14 oz (400 g) firm tofu, drained, pressed, cubed
2 bell peppers, sliced
1 red onion, sliced
3 garlic cloves, minced
2 tbsp taco seasoning
lime wedges, for garnish
cilantro (coriander), chopped, for garnish

Instructions

  • Preheat oven to 425°F (220°C).
  • In baking dish, combine tofu, bell peppers, onion, garlic, taco seasoning, and 2 tablespoons olive oil. Toss until evenly coated and spread in single layer.
  • Bake for 25 minutes, stirring halfway through, until tofu is golden and vegetables are tender.
  • Serve with lime wedges and chopped coriander.
