One-Pot Mushrooms & White Beans

Ingredients
5 oz (144 g) button mushrooms, sliced
12.8 oz (364 g) can white beans, drained
1 ½ tsp curry powder
5.3 fl oz (158 ml) vegetable stock
4.1 fl oz (121 ml) coconut milk
3.8 oz (108 g) spinach
½ lemon, juiced

Instructions
- Heat nonstick pan over medium-high heat. Add mushrooms and splash of water. Cook for 5 minutes, stirring occasionally until browned.
- Stir in beans, curry powder, salt, and pepper. Cook for 1 minute.
- Add vegetable stock and coconut milk. Cover and simmer on low heat for 10 minutes.
- Remove lid and add spinach. Cook uncovered until wilted, about 2 to 4 minutes. Adjust seasoning if needed.
- Remove from heat and stir in lemon juice. Divide into bowls and serve.
