Ingredients

8.7 oz (246 g) chickpeas, drained
½ red bell pepper, diced
2.6 oz (75 g) cherry tomatoes, chopped
1.4 oz (40 g) shallot, finely chopped
4 tbsp cilantro (coriander), finely chopped
0.7 oz (20 g) hemp seeds
½ lemon, juiced

Instructions

  • Add chickpeas to large bowl and lightly mash with fork. Drizzle with 2 tablespoons olive oil and add remaining ingredients. Stir to combine.
  • Taste and add additional salt and pepper, if desired. Divide into bowls and enjoy!
