Grapefruit & Couscous Salad

Ingredients
For the main dish:
¾ cup (180 ml) vegetable broth
¾ cup (130 g) couscous, uncooked
1 avocado, cubed
2 grapefruits, peeled, segmented
14 oz (400 g) can cannellini beans, drained, rinsed
½ cup (75 g) feta cheese, crumbled
3 tbsp fresh mint, chopped
3tbsp fresh cilantro, chopped

Instructions
- Pour vegetable broth into small pot and bring to boil over medium-high heat. Add couscous, stir, and remove pot from heat. Cover with lid and set aside for 5 minutes for couscous to absorb broth. Fluff couscous with fork and set aside.
- Place all dressing ingredients together in bowl and whisk until well combined. Set aside.
- Place beans, couscous, avocados, grapefruit, feta, mint, and cilantro in large bowl. Pour salad dressing and toss gently.
- Serve chilled or at room temperature.
