7.8 oz (220 g) Greek yogurt
1 large egg
2.8 oz (80 g) coconut sugar
3.5 oz (100 g) almond flour
½ tsp vanilla extract
6 tbsp dark chocolate chips

Instructions

  • Preheat oven to 375°F (190ºC) and line baking sheet with parchment paper.
  • In bowl, mix Greek yogurt, egg, sugar, vanilla extract, and pinch of salt until smooth.
  • Gradually add almond flour and mix until cookie dough forms. If too sticky, add a little extra flour; if too dry, add more yogurt. Fold in chocolate chips.
  • Scoop out 9 equal portions of dough, shape into cookies, and place on baking sheet, leaving space between each.
  • Bake until edges turn light golden brown, about 10 to 12 minutes.
  • Let cool completely before serving.
