Baked Cottage Cheese Tomato Fritters

Ingredients
14 oz (400 g) cottage cheese
2 oz (60 g) sun-dried tomatoes in oil, finely chopped
2 cloves garlic, peeled, crushed
2 green onions, sliced
0.2 oz (6 g) fresh basil, sliced into ribbons
1 medium egg
1 tsp Herbes de Provence
5.3 oz (150 g) spelt flour
3.5 oz (100 g) mixed greens
5.5 oz (160 g) cherry tomatoes, halved
1 tbsp balsamic vinegar

Instructions
- Preheat oven to 410°F (210°C).
- In bowl, mix cottage cheese, sun-dried tomatoes, garlic, green onions, basil, egg, Herbes de Provence, salt, and pepper. Stir in spelt flour and combine.
- Line baking sheet with parchment paper. Spoon portions of mixture (about 2 tablespoons each) onto sheet, leaving space between each.
- Bake until golden brown and set, about 15 to 20 minutes.
- Toss mixed greens and cherry tomatoes with 1 tablespoon olive oil and balsamic vinegar. Season with salt and pepper.
- Serve fritters with the salad and enjoy.
