Ingredients
4 oz (120 g) quinoa
1.5 oz (45 g) sun-dried tomatoes in oil
1 clove garlic, peeled
1 tsp dried oregano
½ tsp paprika
8.5 oz (240 g) boneless, skinless chicken breasts
1 red bell pepper, diced
2 oz (55 g) baby spinach
7 oz (200 g) cherry tomatoes, halved

Instructions
- Cook quinoa according to package instructions, then set aside.
- Blend sun-dried tomatoes, garlic, oregano, 1 tablespoon olive oil, paprika, salt, and pepper into a smooth marinade.
- Rub chicken with marinade and let sit for 10 minutes.
- Heat grill pan over medium heat. Cook chicken for 7 to 8 minutes per side until fully cooked.
- Add bell pepper, spinach, and cherry tomatoes to pan. Cook for 5 minutes and season with salt and pepper.
- Mix cooked quinoa with grilled veggies. Slice chicken and place over quinoa mixture. Drizzle with 1 tablespoon olive oil, if desired, and serve.
