Chili Garlic Noodles

Ingredients

10 oz (285 g) udon noodles
1 red bell pepper, thinly sliced
3 green onions, sliced
0.4 oz (12 g) fresh cilantro, chopped
6 oz (170 g) frozen edamame, defrosted
3 tbsp tamari
3 tbsp chili garlic oil

Instructions

  • Boil salted water in pot. Cook udon according to packet instructions. Drain, rinse with cold water, and set aside.
  • Heat 1 teaspoon olive oil in pan. Add bell pepper, green onions, cilantro, edamame, and ⅛ teaspoon sea salt. Cook for 5 to 6 minutes.
  • In bowl, mix tamari, 2 tablespoons rice vinegar, ½ tablespoon balsamic vinegar, and chili garlic oil.
  • Pour sauce over vegetables in pan and add udon. Heat for 2 to 3 minutes. Toss well.
  • Enjoy at room temperature or chilled.
