Ingredients

17 oz (480 g) chickpeas, drained, rinsed
1 cucumber, chopped
1 red bell pepper, chopped
½ red onion, thinly sliced
2.6 oz (75 g) pitted kalamata olives, halved
3 oz (85 g) vegan feta, crumbled
6 servings of Tahini Dressing (see original recipe)

Instructions

  • In large bowl, combine chickpeas, cucumber, bell pepper, onion, olives, and feta. Season with salt and pepper.
  • Pour Tahini Dressing over salad and toss to coat just before serving.
