Spinach Waffles with Avocado

2.1 oz (60 g) baby spinach
3.5 oz (100 g) spelt flour
1 tbsp cornstarch
½ tsp baking powder
1 avocado, pitted, peeled
0.35 oz (10 g) bean sprouts

Instructions

  • Blend spinach and 3.5 oz (100 ml) water until smooth.
  • In mixing bowl, whisk together spelt flour, cornstarch, and baking powder.
  • Fold in spinach puree and mix until batter is smooth and slightly runny. Add more water if needed. Season with salt and pepper.
  • Preheat waffle iron. Lightly grease with ⅛ teaspoon cooking spray.
  • Pour 2 tablespoons batter into waffle iron. Cook until golden brown, or according to waffle iron’s instructions. Carefully remove waffle and place on cooling rack. Repeat with remaining batter.
  • Mash avocado with fork and season with salt and pepper.
  • To serve, spread avocado over waffle, top with sprouts, and repeat to create a stack.
