Protein Crepes with Blueberry Sauce

Ingredients

4.4 oz (125 g) blueberries, quartered
1 tbsp honey
3.9 oz (110 g) all-purpose flour
2.1 oz (60 g) vanilla protein powder
2 eggs
11 oz (325 ml) unsweetened almond milk
1 tbsp coconut oil
1 tsp cocoa powder

Instructions

  • In small saucepan, cook blueberries with honey over medium heat. Stir occasionally until they soften into a sauce-like consistency, about 10 minutes.
  • In blender or food processor, combine flour, protein powder, eggs, and almond milk. Blend until smooth.
  • Heat nonstick frying pan over high heat. Grease pan with coconut oil. Pour in ladleful of batter, swirling pan to evenly coat the base.
  • Fry for about 1 minute, flip, and cook for another minute. Repeat with remaining batter, using more coconut oil as needed.
  • Spread blueberry sauce over crepes and roll into tubes. Dust with cocoa powder and enjoy!
