Gochujang Salmon with Garlicky Spinach

Ingredients

2 tbsp gochujang
1 tbsp mirin
2 tbsp tamari
1 tbsp honey
1 ½ tsp toasted sesame oil
4 cloves garlic, grated
2 tsp fresh ginger, grated
1 ¼ lbs (565 g) salmon, cut into 4 portions
8 oz (225 g) baby spinach
1 tsp sesame seeds
1 green onion, sliced for garnish

Instructions

  • Preheat broiler to high and position rack in upper third of oven. Line baking sheet with foil and coat with ½ teaspoon cooking spray.
  • In small bowl, make glaze by whisking together gochujang, mirin, 1 tablespoon tamari, honey, ½ teaspoon sesame oil, ¼ of grated garlic, and ginger.
  • Pat salmon dry and place skin side down on prepared baking sheet. Brush with glaze. Broil until just cooked through, about 5 to 8 minutes depending on thickness.
  • Heat remaining teaspoon sesame oil in large skillet over medium-low heat. Add remaining garlic. Cook, stirring until fragrant and just starting to brown, about 3 minutes. Add spinach and cook until wilted. Remove from heat and stir in remaining tablespoon tamari.
  • Plate salmon over spinach. Garnish with sesame seeds and green onions.
