Sweet Potato Turkey Chili

Ingredients
1 yellow onion, sliced
1 ½ lbs (680 g) lean ground turkey
2 tbsp taco seasoning
24 oz (680 g) sweet potatoes, chopped into small pieces
3 cloves garlic, minced
16 to 24 oz (480 to 720 ml) chicken stock
1 can (14 oz/400 g) black beans, drained, rinsed
5 tbsp Greek yogurt, for serving

Instructions
- Heat 1 tablespoon olive oil in large pot over medium-high heat. Add onion, turkey, and 1 tablespoon taco seasoning. Cook, adding spoonfuls of water as needed to keep turkey moist, until it is browned and onions are soft. Remove and set aside.
- In same pot, add sweet potatoes and remaining taco seasoning. Stir to coat.
- Once sweet potatoes start to brown, add garlic, 16 oz (480 ml) water, and stock. Bring to a boil and simmer until sweet potatoes are very soft, about 10 minutes.
- Use immersion blender to puree mixture to desired consistency. Return browned turkey to pot, add black beans, and stir. Simmer for a few minutes.
- Serve each dish with tablespoon of Greek yogurt.
